Tasting notes:  Mildly grassy, buttery smooth with umami notes balanced by mild mineral astringency which provides good structure. A classic refreshing green finish.

Grown in Korea in volcanic soil on subtropical Jeju Island, it is slso known as “sparrow’s beak,” a second flush picking. This lightly roasted green tea hits above its weight.

Jejudo, a World Heritage area off the Korean south coast, is a volcanic island dominated by Hallasan, a volcano 1,950m high. The volcanic soil and sub-tropical climate make this island an ideal location for tea growing and is the fastest growing region of tea production in Korea today.

The four grades of Korean green tea are: 1. Ujeon, early April harvest, first pluck, buds only; 2. Sejak, April-May harvest, second pluck, one bud and one leaf; Joongjak, late May harvest, third pluck, young leaves; Daejak, late June harvest, fourth pluck, mature leaves.
