This tea takes its name (Anji White Tea) not from any unique processing method, but from the muted green colour of the fresh leaves that are used to produce it. It is made from a white tea varietal but processed as a green tea and a whole series of cultivars have been developed over the last two decades to consistently deliver the pale leaf colour you will find after brewing up this tea. Anji County Bai Cha has become one of the most popular gift teas in China, and this late March pick from the Jiang Family is an excellent find.
