Picked early in the season with a very short window. The pickings – generally bud and one leaf – must be harvested before they get too green and lose their signature flavour.

This tea takes its name (Anji White Tea) not from any unique processing method, but from the muted green colour of the fresh leaves that are used to produce it. A whole series of cultivars have been developed over the last two decades to consistently deliver the pale leaf colour you will find after brewing up this tea. Anji County Baicha has become one of the most popular gift teas in China, and this late March pick from the Jiang Family is one of the best you will find.
